This recipe is a spin on my mom's amazing pot roast. I don't have a good roasting pan or a dutch oven, so the crock pot was the way to go for me.
I first sprayed the pot with olive oil and then sliced thick rings of onions and layered the bottom, followed by a few baking potatoes and halved carrots. Create a little well to put the meat in the middle by layering the potatoes and carrots up along the sides of the pot.
Now place your pork on top (I used some great-looking pork tenderloins, cut into large chunks)
The key to the amazing flavor is the gravy. You can use Cream of Mushroom soup or make your own gravy*. Pour it all over top and then 1 cup of water.
And the secret ingredient: Lipton Onion Soup on top!
Cook on low 8 hours.
* To make my own gravy I periodically put away cans of veg/ beef/ chicken stock and pull it out for soups or roasts. Pour it in a sauce pan, warmed it up on the stove and whisk in 1 tablespoon of flour to thicken. For extra potency I like to add McCormick's beef base and some dried minced onions.
