Sad little Strawberry Pie

The strawberries in Boone cost less than $1 a pound right now, so we buy them left and right to snack on. A really friendly lady in the market offered to sell them to us half- price (that NEVER happens) so we bought her out a few days ago. I decided to make strawberry pie- how hard can that be?



I chose a real simple recipe 1. Bake a crust 2. Fill cooled crust with sliced strawberries 3. Add strawberry glaze and refrigerate for 2 hours.

...unfortunately, my crust was too thick and the strawberry glaze didn't 'gel' the pie together. It was still tasty, but who wants to eat a pie that's not pretty? What's really embarrassing is I got this crust recipe from SCOTT. He got it into his head one day to make a pecan pie (which I should post about... it was amazing) and HIS crust was perfect! Did he take my 'woman card' or what? haha


Next time I'll choose a recipe that requires me to bake the pie so the glaze will gel and not be all runny.
Here is the strawberry glaze recipe... which I will make just to eat because it's delicious. I bet it would also be a good ice-cream topping.

1 cup mashed strawberries
1 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water


Combine the sugar, cornstarch, crushed strawberries, and water in a saucepan. Stir well and cook over medium heat until the mixture begins to boil, stirring often. Cook for two more minutes or until the sauce becomes thick and translucent. Set aside to cool.
