Recently, I found some "ketchup" in the grocery store- I was very brave and decided to use a ketchup+vinegar recipe for barbecue this time. As you can see, the ketchup I used was made with pink tomatoes!
I try as much as possible to find creative, healthy meals that don't require a 7 hour bus ride to the import store. Vinegar based barbecue (which I'm pretty sure is the only kind of barbecue God eats) is on that list. Everything I need for it can be found right here in our city! I just pop it in the crock pot for 8 hours in the vinegar sauce and then make some steak fries to go on the side.
Here's the recipe~
Pork (we use chicken breast as a healthy alternative)
1 1/2 cups vinegar (you can choose white wine vinegar, or any other vinegar that you fancy)
1/2 cup water
1/2 cup pink ketchup (just kidding... real ketchup would be better)
1/2 t ground black pepper
1/2 t red pepper flakes
Crock it for 6-8 hours on low or 4 hours on high. Shred it up and eat it plain or on yummy home-made bread as seen above.
I'm going to start a new tradition of rating my recipes-
Christine's rating: 5 stars for simplicity, 3 stars for yumminess
(just to give you an idea, pot roast earns 5 stars, and steamed veggies earns 1 star. Scott says nothing I make is a 1 star... but I'm pretty sure that last night's un-eaten green beans tell the truth :-)
