Great big thanks to Amy's Finer Things for this inspiration. Cream of Mushroom soup is not only hard to come by in China, but it's expensive, too. So I made it myself and it made a killer green bean casserole. Scott oooh and ahhhed over every bite! Music to this wife's ears.
Here is the amazingly simple recipe:
1/4 cup mushrooms, sauteed in butter
2 Tablespoons butter
1/2 cup flour
4 cups whole milk
1 teaspoon salt
1 teaspoon parsely
1/4 teaspoon black pepper
seasonings to your own taste
1/4 cup chopped mushrooms sauteed in butter.
(I'm not sure what kind of mushrooms are best. Are all mushrooms created equally? I just used the kind that the sweet old lady in the market happened to dump in my tote bag!)
By the way, please observe all the beautiful cooking utensils I am working with today. My sweetheart bought all these things at IKEA for me right before we moved. Major points, honey!!
In a separate pot, mix 1/2 cup flour with 1 cup of whole milk. Stir it often with a whisk to make sure there are no lumps! It will start to thicken... add another 2 tablespoons of butter, 1 teaspoon of salt.
Slowly add another 3 cups of milk, and then gradually add in the mushrooms.
Add more flour or milk depending on how thick you like it. I followed this recipe exactly and the next day, it did that suction-y flop out of the can just like a can of Campbell's does. It sounds like ssshlploch!
Stir stir stir. If you say "Stir" several times in a row, it begins to not sound like a real word anymore. Have you noticed?
Get that funnel and mason jar ready....
Look at that! I love things in mason jars. This recipe makes the equivalent of about 3 cans of Campbell's.
*Note* I would use this rather quickly. I tried to use a can that had been in the fridge about a week and it made a roast taste like old sour cream!

mushrooms. how you can actually devote an entire post to mushrooms when you have a perfectly beautiful 2 month old little girl sitting right in from of you is beyond me.
