Just recently a group of young people of fellow southerners came to study culture and language at our college for two weeks-- I had no idea how much I would love all of them and miss them when they are gone, by the way. When we said goodbye on Wednesday, I was inconsolable!! (more stories about their visit later)
Anyway, while they were here, they let me cook them a big 'ol southern meal- they got tired of the #6 combo at Dicos- and we played cards and chatted long into the night. I tried a new recipe for Mac and Cheese and it's a keeper!
INGREDIENTS
4 cups macaroni - prepared according to instructions
1/2 c butter
1/2 c flour
3/4 c milk
1/2 c velveeta cheese (I didn't have velveeta-surprise surprise- so I just used cheddar)
1/2 c cream cheese
1/4 Parmesan cheese
1/2 t salt
1/2 t pepper
2 C shredded cheese (I used aged cheddar- oh yum)
1/4 c bread crumbs
Melt the butter in a pan, and then slowly stir in the 1/2 c flour until all incorporated. Gradually add milk- make sure to stir out any lumps. Bring to simmer and cook for 2 minutes. Make sure to stir continuously or you'll get lumps and it will burn!
Now stir in the Velveeta, cream cheese, and Parmesan cheese until they are all completely melted. Now add the macaroni (that has already been boiled) and put in a baking dish (I didn't cover mine with foil, but I will next time)
Bake at 350 F for 30-35 minutes, then add breadcrumbs and bake for another 10 minutes.
You won't be disappointed!!! In honor of Jordan (one of the Americans who visited us), I'm calling this "Nailed It Mac and Cheese" (because he yelled NAILED IT after teaching the students the Electic Slide boogey woogey woogey woogey.) oooh funny stuff.
